Claims (32)
- 건조 중량 기준으로 켈달법의 켈달 질소×6.25에 의해 결정될 때 90중량% 이상의 단백질 함량을 가지는 아마유 종자 단백질 분리물.
- 제1항에 있어서, 상기 단백질 함량은 건조 중량 기준으로 켈달법의 켈달 질소×6.25에 의해 결정될 때 100중량% 이상인 아마유 종자 단백질 분리물.
- 제1항 또는 제 2항에 있어서, 낮은 리놀렌산 함량을 갖는 아마의 변종인 리놀라로부터 얻어지는 아마유 종자 단백질 분리물.

- 제1항 또는 제 2항에 있어서, 단백질 미셀 덩어리의 습윤 형태인 아마유 종자 단백질 분리물.
- 제1항 또는 제 2항에 있어서, 건조 분말 형태인 아마유 종자 단백질 분리물.

- 아마 단백질 분리물을 제조하는 방법에 있어서,(a) 아마유 종자 밀을 추출하여 상기 아마유 종자 밀의 단백질의 용해를 일으키고 단백질 수용액을 형성하는 단계;(b) 잔여 아마유종자 밀로부터 단백질 수용액을 분리하는 단계;(c) 선택적 박막기법을 사용하여 이온강도를 일정하게 유지하면서 상기 단백질 수용액의 단백질 농도를 증가시켜 농축된 단백질 용액을 제공하는 단계;(d) 상기 농축된 단백질 용액을 냉수로 희석하여 단백질 미셀들이 형성되게 하는 단계;(e) 단백질 미셀들을 침강시켜 비정질(非晶質, amorphous)이고, 점착성이면서, 젤라틴성인 단백질 미셀 덩어리를 형성하는 단계; 및(f) 건조 중량 기준으로 켈달법의 켈달 질소×6.25에 의해 결정될 때 90중량% 이상의 단백질 함량을 가지는 상청액으로부터 미셀 덩어리를 회수하는 단계를 포함하는 방법.
- 제9항에 있어서, 상기 아마유 종자 밀의 추출 단계는:(a) 0.10 이상의 이온강도 및 4 내지 7의 pH를 갖는 수성의 염 용액을 사용하거나;(b) 0.10 이상의 이온강도 및 7 내지 12의 pH를 갖는 수성의 염 용액을 사용하고, 상기 추출 단계 이후에, 수성 단백질 용액의 pH는 상기 농축 단계 이전에 4 내지 7로 조정되고;(c) 상기 아마유 유종자 밀을 물에 의해 추출하고, 결과적으로 얻어진 단백질 수용액에 연이어 염을 첨가하여 0.10 이상의 이온강도를 가지는 단백질 수용액을 제공함으로써 달성되는 방법.
