Claims (5)
- (ⅰ) 물에 0.5 내지 3.0%(w/v)의 젖산칼슘, 0.05 내지 0.3%(w/v)의 비타민 C 및 20 내지 40%(w/v)의 당류를 가하여 제조한 당침용액에 세절된 과일을 넣고, 20 내지 40℃의 온도 및 300 내지 600mmHg의 압력 조건하에서 2 내지 30분동안 침지하는 공정; 및,(ⅱ) 상기 당침된 과일로부터 당침용액을 제거하고, 상기 과일을 건조시키는 공정을 포함하는, 과일 건조품의 제조방법.
- 제 1항에 있어서,과일은 사과, 복숭아, 딸기, 바나나, 키위, 포도, 자두 또는 망고인 것을 특징으로 하는과일 건조품의 제조방법.
- 제 1항에 있어서,당류는 포도당, 설탕, 젖당, 맥아당, 자당 또는 이들의 혼합물인 것을 특징으로 하는과일 건조품의 제조방법.
- 제 1항에 있어서,과일을 건조시키는 방법은 열풍건조방법 또는 동결건조방법인 것을 특징으로 하는과일 건조품의 제조방법.
- 제 1항의 방법으로 제조되어, 젖산칼슘과 비타민 C가 부가된 과일 건조품.
