Claims (7)
- a) 수성의 펩티드 혼합물을 제조하기 위하여 유장단백질로부터 획득한, 트립토판을 함유하는 펩티드를 효소에 의해 분해하는 단계; b) 상기 효소를 비활성화하는 단계; c) 상기 수성의 펩티드 혼합물의 pH를 4.0 내지 6.0으로 조절하여, 트립토판을 함유하는 펩티드의 침전물을 형성하는 단계; 및 b) 상기 침전된 펩티드를 분리하는 단계;를 포함하는 트립토판을 함유하는 펩티드를 제조하는 방법에 의해 얻을 수 있고,펩티드에 대하여 8 내지 15 w/w% 의 트립토판을 함유한 것을 특징으로 하는 트립토판을 함유한 펩티드 혼합물.
- 제 1항에 있어서,상기 트립토판/(페닐알라닌+티로신)의 비율이 중량기준으로 0.900이상인 펩티드 혼합물.
- 제 1항에 있어서,상기 트립토판/(페닐알라닌+티로신+루신+발린+이소루신+메티오닌)의 비율이 중량기준으로 0.300이상인 펩티드 혼합물.
- 제 1항 또는 제 2항에 있어서,세로토닌, 트립타민, 니코틴산, 또는 멜라토닌의 합성을 유도하기 위한 음식 구성성분으로 사용되는 펩티드 혼합물.
