Claims (6)
- 천연조미료의 제조방법에 있어서,제철에 채취한 매생이의 이물질을 제거하고, 물로 세척하여 염분을 제거하는 매생이의 원초 수확 및 세척과정과;세척한 매생이를 물과 중량비 1:0.5~3으로 혼합한 후, 초음파 마쇄기(sonic generator)를 이용하여 10~30분 동안 매생이 세포를 일부 파괴한 후, 리폭시게네이즈(lipoxygenase), 하이드로퍼록사이드 리아제(Hydroperoxide lyase)중에서 선택된 1종을 첨가하는 매생이의 전처리 과정과;전처리된 매생이를 15~40℃에서 10~100분간 가온하는 숙성과정과;숙성과정을 거친 매생이를 건조하여 분말화하는 분말화과정과;매생이 분말을 통상의 방습포장지로 포장하는 포장과정으로 이루어지는 것을 특징으로 하는 매생이를 이용한 천연조미료의 제조방법
- 제 1항에 있어서, 리폭시게네이즈, 하이드로퍼록사이드 리아제 중에서 선택된 1종을 세포가 일부 파괴된 매생이 0.5~2ml 당 0.5~3mg 첨가하는 것을 특징으로 하는 매생이를 이용한 천연조미료의 제조방법
- 제 1항에 있어서, 분말화과정의 건조는 숙성한 매생이를 40~60℃의 온도에서 건조하여 수분함량이 2~10%가 되도록 하는 것을 특징으로 하는 매생이를 이용한 천연조미료의 제조방법.
- 제 1항에 있어서, 분말화과정의 건조는 동결건조기에서 건조하여 수분함량이 2~10%가 되도록 매생이를 건조하는 것을 특징으로 하는 매생이를 이용한 천연조미료의 제조방법
- 제 1항에 있어서, 분말화과정은 매생이를 3~150mesh 로 분말화하는 것을 특징으로 하는 매생이를 이용한 천연조미료의 제조방법
- 제 1항에 의하여 제조된 매생이를 이용한 천연조미료
