Claims (1)
- 생선을 할복하여 생선의 부패하기 쉽고 식용이 불가능한 부분을 제거하는 가공단계;생선을 수분함량이 10%가 될 때까지 자연건조시키는 자연건조단계;건조된 생선을 3시간 내지 5시간 동안 솔잎 또는 쑥을 태운 훈연에 훈제시키는 제1훈제단계;훈제된 생선을 -45℃에서 2시간 내지 3시간 동안 동결시키는 동결단계;동결된 생선을 5시간 내지 7시간 동안 솔잎 또는 쑥을 태운 훈연에 훈제시키는 제2훈제단계;훈제된 생선을 -4℃에서 수분함량이 50% 내지 60%까지 건조시키는 건조단계;건조된 생선을 진공포장하는 진공포장단계;로 이루어진 과메기 제조방법에 있어서,상기 가공단계와 상기 자연건조단계 사이에 상기 가공된 생선을 해양심층수에 1시간 30분 내지 1시간 50분 동안 숙성시키는 숙성단계;를 포함하는 것을 특징으로 하는 해양심층수를 이용한 과메기 제조방법.
