Claims (4)
- (1) 완숙한 상태의 채취한 과일을 세정한 후 파쇄하면서 살부분을 분리해 낸 다음, 파쇄한 후 추출한 액상 과일즙을 산도(pH) 3.5~5.5로 조절하여 준비하는 제조1단계와;(2) 수확하여 선별한 콩을 세척하여 약 3~15℃ 정도의 물에서 1일~4일 정도 수침하는 제조2단계와;(3) 상기 제조2단계에서 수침시킨 콩을 건져 내어 물기를 제거한 다음, 전통 재래식 양솥이나 찜통 등에서 약 85~110℃ 정도의 끓는 물에서 1~2 시간 정도 삶는 제조3단계와;(4) 황토의 미생물들에 의해 발효시킬 수 있도록 황토로 지은 발효실에서, 평평하게 편 볏짚 위에 면을 깔고 상기 제조3단계에서 삶아낸 콩을 소정 두께로 편 후 두꺼운 면이불로 덮어, 실내 온도 약 20∼30℃의 온도에서 약 4일∼7일 정도 보온함으로써 황토의 자연산균을 이용하여 발효시키는 제조4단계와;(5) 상기 제조4단계에서 발효시킨 콩을 자연상태에서 약 12~24 시간, 수분함유량이 5~3 % 정도의 꼬돌꼬돌한 상태가 되도록 건조하여 미세한 분말로 분쇄하는 제조5단계와;(6) 상기 제조5단계에서 분쇄한 청국장분말과 상기 제조1단계에서 추출한 액상 과일즙을 [청국장분말:액상 과일즙]의 비율 [10~75wt%: 90~25wt%] 정도로 혼합 하고 일정한 2~3시간 교반하여 완성하는 제조6단계를 포함하는 것을 특징으로 하는, 과일 청국장 음료의 제조방법.
- 제1항에 있어서, 상기 제조방법은과일로부터 추출한 과일액상즙을 개별적으로 사용하여 제조하는 것을 특징으로 하는, 과일 청국장 음료의 제조방법.
- 제1항에 있어서, 상기 제조방법은과일로부터 추출한 과일액상즙을 적어도 둘 이상 혼합하여 제조하는 것을 특징으로 하는, 과일 청국장 음료의 제조방법.
