Claims (8)
- (a) 증류수에 분리대두단백질(isolated soy protein)을 녹여 단백질 용액을 제조하는 단계;(b) (a) 단계의 단백질 용액에 트란스글루타미나제 (transglutaminase) 효소를 첨가하여 효소가 첨가된 단백질 용액을 제조하는 단계;(c) (b) 단계의 결과물과 어유, 식물성유, 중쇄지방산 및 지용성 영양성분으로 이루어진 군으로부터 선택된 어느 하나 이상의 유지를 혼합하여 수중유적형 (O/W형) 유화액을 제조하고, 옥배유에 유화제를 녹여 외부연속상을 제조하는 단계;(d) (c) 단계의 외부연속상에 (c) 단계의 수중유적형 유화액을 첨가하여 O/W/O형 다중유화액을 제조하는 단계;(e) (d) 단계의 다중유화액을 항온수조에서 겔화반응시켜 미세캡슐이 생성되도록 하는 단계;(f) (e) 단계의 결과물을 여과하여 미세캡슐을 추출하는 단계;(g) (f) 단계의 결과물을 세척하는 단계; 및(h) (g) 단계의 결과물을 건조하는 단계를 포함하는 것을 특징으로 하는 유지함유 미세캡슐 제조방법.

- 제 4 항에 있어서,상기 분리대두단백질의 함량은 (a) 단계의 단백질 용액에 대하여 10중량%인 것을 특징으로 하는 유지함유 미세캡슐 제조방법.
- 제 1 항에 있어서,상기 (e) 단계의 겔화반응은 37℃의 온도하에서 4 내지 20시간 동안 이루어지는 것을 특징으로 유지함유 미세캡슐 제조방법.
- 제 6 항에 있어서,상기 (e) 단계의 겔화반응은 37℃의 온도하에서 4시간 동안 이루어지는 것을 특징으로 하는 유지함유 미세캡슐 제조방법.
- 제 1 항에 있어서,상기 (g) 단계의 세척은 알코올을 사용하는 것을 특징으로 하는 유지함유 미세캡슐 제조방법.
