Claims (4)
- 표피부가 두꺼운 야채를 소금으로 문질러서 깨끗이 세척하여 물기를 제거한 후 중앙에 길게 칼집을 내어 준비하는 단계; 핏물을 제거한 고기와 황기, 맥문동, 총백, 엄나무 껍질을 물에 넣고 중간불에서 1시간 30분 정도 끓인 후 고기와 모든 약재는 건져내고 부유하는 기름기를 제거한 육수를 준비하는 단계; 상기 육수에 수삼을 넣고 소금, 설탕, 식초로 간하여 10분간 끓이는 단계; 이 육수를 준비된 야채에 부은 뒤 식혀서 1일 정도 냉장ㆍ숙성시켜 제조되는 단계로 이루어지는 것을 특징으로 하는 수삼을 이용한 음청용 김치의 제조방법
- 제 1항에 있어서, 표피부가 두꺼운 야채는 오이, 청고추, 고구마순으로 구성된 군 중에서 선택되는 것을 특징으로 하는 수삼을 이용한 음청용 김치의 제조방법
