- 삭제
- 연육을 주원료로 한 어묵반죽으로 두께 1-2㎜의 외피를 형성하는 단계와,상기한 외피를 90-100℃ 정도의 온도로 1-2분간 가열하여 기계에 붙지 않도록 익히고 이를 자연 냉각하는 단계와,상기한 외피의 내면에 익히지 않은 어묵반죽을 0.5-1㎜ 정도의 두께로 도포하여 외피를 접었을 때 잘 붙도록 하는 단계와,상기한 어묵 반죽이 도포된 외피에 일정 간격마다 만두소를 공급하고 상기한 외피를 접어서 맞붙여 압착하는 단계와,상기한 만두소가 일정 간격마다 충진된 외피를 일정 간격마다 절단하여 하나의 만두로 만드는 단계로 구성함을 특징으로 하는 연육을 이용한 만두의 제조방법.
