- 수확된 단감을 서늘한 기온의 통풍이 잘되는 장소에서 1일 내지 4일 숙성시키는 숙성단계(S1)와, 숙성된 단감의 꼭지를 제거하고, 세척하는 준비단계(S2)와, 상기 단감의 당도를 향상시키기 위하여 상기 준비단계(S2)에서 준비된 단감을 밀폐 가능한 용기에 물과 함께 넣고, 용기 내부의 압력을 변화시키면서 용기의 내부를 일정한 온도로 일정한 시간동안 가열하는 열처리단계(S3)와, 상기 단감의 엑기스를 추출하기 위하여 상기 열처리단계(S3)에서 열처리된 단감을 분쇄, 압착하여 필터링하는 추출단계(S4) 및 추출된 상기 단감의 엑기스를 포장용기에 포장하는 포장단계 (S5)를 포함하여 이루어지고,상기 열처리단계(S3)는 상기 용기의 내부가 130도 내지 230도의 온도로 2시간 내지 4시간 동안 가열되도록 상기 용기 내부의 압력을 약 90분 동안 2.5 kg/m2내지 3.5 kg/m2(최고압)까지 승압시키는 승압단계(S31)와, 상기 승압단계(S31)에서 승압된 상기 용기 내부의 압력을 약 10분 동안 0.5 kg/m2내지 1.5 kg/m2(중간 저압)까지 감압시키는 중간감압단계(S32)와, 상기 중간감압단계(S32)에서 감압된 상기 용기 내부의 압력을 약 30분 동안 1.5 kg/m2내지 2.5 kg/m2(중간 고압)까지 재승압시키는 재승압단계(S33) 및 상기 재승압단계(S33)에서 재승압된 상기 용기 내부의 압력을 약 15분 동안 실압까지 감압시키는 감압단계(S34)를 포함하여 이루어지는 것을 특징으로 하는 상기 단감음료 제조방법.
- 제 1 항에 있어서, 상기 열처리단계(S3)는 용기 내부의 압력을 서서히 증가시켰다가 급속히 감소시키는 압력밥솥의 원리를 이용하는 것을 특징으로 하는 상기 단감음료 제조방법.
