Claims (13)
- 단사 결정계에 속하고, 단위 격자 상수가 a=7.614Å, b=10.757Å, c=9.370Å 및 β=108.2°이며, 융점이 149℃ 내지 152℃이고, 수분 함량이 0.5%이하이며, 락티톨 함량이 99% 이상인 결정질 무수 락티톨.
- 제1항에 있어서, 상기 락티톨은 흡습도가 낮은 것을 특징으로 하는 결정질 무수 락티톨.
- 무수 성분을 기준으로 70% 이상의 락티톨을 함유하는 수용액에서 결정화시켜 단위 격자 상수가 a=7.614Å, b=10.757Å, c=9.370Å 및 β=108.2°이며, 융점이 149℃ 내지 152℃이고, 수분 함량이 0.5% 이하이며, 락티톨 함량이 99% 이상인 결정질 무수 락티톨을 제조하는 방법에 있어서, 락티톨 수용액을 락티톨로 과포화시키고; 그 수용액을 교반하에 증발시키거나, 교반하에 온도를 낮추거나, 교반하면서 그 수용액을 증발시킨 후 온도를 낮춤으로써 수용액을 70℃-100℃의 온도하의 결정화 조건으로 처리하는 것을 특징으로 하는 결정질 무수 락티톨을 제조하는 방법.
- 제3항에 있어서, 상기 락티톨 수용액을 80 내지 95 중량%의 농도로 증발시키고, 70-100℃ 범위 내의 온도에서 이 과포화된 용액이 자발적으로 시드 결정을 형성하게 하거나 또는 70-100℃ 온도 범위 내에서 시드 결정을 첨가함으로써 시드를 형성하게 하여 결정 함량을 증가시킨 후, 모액에서 무수 락티톨 결정을 분리하는 것을 특징으로 하는 방법.
- 제3항에 있어서, 상기 락티톨 수용액을 85-95중량%의 농도로 증발시키고, 80-100℃의 온도범위 내에서 시드 결정을 첨가함으로써 상기 과포화된 용액이 시드를 형성하게 하며, 70℃ 내지 90℃의 온도로 상기 혼합물을 서서히 냉각시키고, 모액에서 무수 락티톨 결정을 분리하는 것을 특징으로 하는 방법.
- 제1항에 따른 결정질 무수 락티톨을 포함하는 사카로즈 대용 감미제.
- 제1항에 따른 결정질 무수 락티톨을 포함하는 경질 당과류 및 캔디용(hard sweets)감미제.
- 제1항에 따른 결정질 무수 락티톨을 포함하는 쵸콜렛용 감미제.
- 제3항에 있어서, 상기 수용액 중의 락티톨의 함량이 90% 이상인 방법.
- 제4항에 있어서, 상기 시드를 형성시킨 후, 증발시키는 단계를 추가로 포함하는 방법.
- 제4항에 있어서, 상기 증발 단계 중에 상기 락티톨 용액을 추가로 첨가하는 방법.
- 제4항에 있어서, 분리 단계 전에, 생성된 혼합물을 70℃ 내지 90℃ 범위내의 온도로 냉각시키는 단계를 추가로 포함하는 방법.
- 제4항 또는 제5항에 있어서, 분리된 무수 락티톨 결정을 세척 및 건조시키는 단계를 추가로 포함하는 방법.
