Claims (4)
- 효모 슬러리를 30~60℃에서 6~20시간 동안 자가소화 시킨후, 엔도형 단백질 분해효소를 6~18시간 동안 처리 단백질을 올리고 펩티드로 분해하고, 엑소형 단백질 분해효소를 20~28시간 동안 처리하여 아미노산 형태로 분해하여, 분해액을 원심분리 한 후 상등액을 취하고 50%까지 감압 농축하여 분무 건조시킴을 특징으로 하는 배지용 효모엑기스의 제조방법.
- 제1항에 있어서, 단백질 분해효소의 량은 자가소화 효모엑기스 중량대비 0.01~0.1중량%이고, 단백질 분해시 pH는 5.0~8.0임을 특징으로 하는 배지용 효모엑기스의 제조방법.
- 제1항에 있어서, 농축된 효모엑기스를 분무 건조시 온도는 70~120℃ 임을 특징으로 하는 배지용 효모엑기스의 제조방법
- 제1항의 방법에 따라 제조된 단백 함량이 높은 배지용 효모엑기스
