Abstract
PURPOSE:To obtain a substance, useful as a gelling agent or thickening agent having hardness and springiness and applicable to the field of foods, medicines, etc., by treating porphyran contained in seaweeds of the genus Porphyra with an alkali and desulfating the resultant substance. CONSTITUTION:Porphyran contained is seaweeds of the genus (e.g. Porphyra yezoensis, Porphyra suborbiculate Kjellman or Porphyra tenera Kjellman) is treated with an alkali and desulfated to produce a substance having gelling ability. If the above-mentioned alkali treatment is applied before extracting the porphyran, the raw material seaweeds are normally dipped in a 0.5-4mol. alkali solution (e.g. NaOH or KOH) and allowed to stand at ambient temperature -50 deg.C for 1-14 days to carry out the alkali treatment. If the treatment is carried out after extracting the porphyran, an alkali is preferably normally added so as to provide 0.5-2.5mol. concentration and the porphyran is preferably heat-treated at 70-130 deg.C.
