Abstract
PURPOSE:To utilize a microorganism having the ability to produce lipase for lipase enzymic reaction, by cultivating the microorganism, washing the aforementioned microorganism with water or directly using the microorganism or replacing water with a polar solvent and then nonpolar solvent in using for ester interchange or synthetic reaction in an oil system. CONSTITUTION:A microorganism having the ability to produce lipase is cultivated in a culture medium, filtered off and washed with water several times to remove culture medium components, etc., contained in the microorganism. When the microorganism is utilized for hydrolytic reaction of fats and oils or ester synthetic reaction of glycerol or other alcohols with fatty acids, the microbial cells washed with water are directly used as a catalyst. When the microorganism is used for ester interchange or ester synthetic reaction in an oil system, the microbial cells washed with water are washed with a polar solvent, such as acetone, to replace water contained in the microbial cells with the polar solvent and dehydrate the microbial cells. Furthermore, the dehydrated microbial cells are washed with a nonpolar solvent, such as hexane, to replace the polar solvent therewith and enzymic reaction is carried out utilizing lipase contained in the above-mentioned microorganism.
