Description

【発明の詳細な説明】 本発明は可食性インキが生地表面に着色された
水産煉製品を得るための着色包装方法に関し、そ
の目的とするところは食用に供するために包装用
フイルムを製品から剥離して取り除くと生地表面
に可食性インキが転写により着色された水産煉製
品が得られることを可能にすることにあり、その
目的を達成するための特徴となる方法は可食性イ
ンキを包装用フイルムに水産煉製品の生地に転写
可能に印刷し、包装後前記可食性インキを水産煉
製品に加圧により転写するものである。

従来特公昭57−30号公報に描出しようとする装
飾用文字および図形がすり身によつて表出されて
付着した包装用フイルムをあらかじめ用意し、こ
の包装用フイルムに付着しているすり身により形
成された図形等をすり身の成形品に重ね合せ、そ
の状態で蒸してかまぼことすることにより、蒸し
上がつた段階で図形等がかまぼこと一体になり転
写するようになしたものが提案されているが、こ
れはすり身によつて形成された図形等を転写する
ものである。また特公昭53−12589号公報として
油脂を主材とする食用インキで包装用フイルムに
謄写印刷し、このフイルムを陰圧成形して印刷領
域を凹所内側にもつ菓子型を形成し、これに流動
状の油性菓子生地を流しこみ、冷却固化すること
により油性菓子生地に油脂を主材とする食用イン
キを転写したものが提案されているが、この場合
でも菓子型に流動状の油性菓子生地を流しこむも
のであつて、水産煉製品の成形品に包装用フイル
ムを被覆して包装することにより可食用インキを
鮮明かつ美麗に転写することは難しいのが実情で
あつた。

て、食用に供するために包装用フイルムを製品か
ら剥離して取り除くと生地表面に可食性インキが
転写により鮮明かつ美麗に着色された水産煉製品
が得られるようなしたものである。

ムは糖類をコーテイングして糖類層を備えたフイ
ルムを主体としたものを用い、例えば防湿セロフ
アンの両面に塩化ビニリデンをコーテイングし、
その表面に多糖類をさらにコーテイングしたフイ
ルム(商品名Qラツプ)または塩化ビニル・塩化
ビニリデン共重合体の表面に多糖類をコーテイン
グしたフイルム等が好ましい。その場合フイルム
の印刷面にのみ糖類がコーテイングされていれば
よい。また可食性インキは天然樹脂であるセラツ
クのアルコール溶液またはセラツクのアルカリ溶
液に食用色素を添加した水性アルコール溶剤のも
のが好適である。なお、多糖類とは二糖類、三糖
類、四糖類などの加水分解によつて、2分子以上
の単糖類を生ずるものをいう。

熱処理する。その場合リテーナに入れて熱処理し
たりあるいは真空包装する等の手段によりフイル
ムの上から圧力を加えることによつて上記フイル
ムに印刷された可食性インキを転写する。その場
合上記フイルムには多糖類がコーテイングされて
いるためこの多糖類層に印刷された可食性インキ
ははじくことがなく美麗になり、しかも水産煉製
品の表面生地と上記可食性インキのバインダー成
分とのなじみがよくインキは確実に生地表面の方
へ転写する。すなわちセラツクのアルコール溶液
に食用色素を溶解した可食性インキは包装用フイ
ルムの多糖類層に鮮明かつ美麗に濃く印刷される
と共に、可食性インキのバインダー成分は水産煉
製品の生地との接着度が良好なため、食用に供す
るために包装用フイルムを製品から剥離して取り
除くと生地表面に可食性インキが確実に移行し転
写により鮮明かつ美麗に着色された水産煉製品が
得られる。

インキのバインダー成分とのなじみがよくインキ
は確実に生地表面の方へ転写する効果を奏し難い
面があります。また、上記従来法は天然色素の抽
出液中にセロフアン紙を浸漬する必要があるた
め、単にセロフアン紙全体を着色した色彩をハム
等の肉製品に転写することしかできにくいという
不具合を有するが、本発明方法は浸漬する必要が
ないため、可食性インキの文字、模様等を転写で
き商品価値が高い。

ク50部をエタノール300部に溶解し、食用色素を
添加した可食性インキをグラビア印刷機を用いて
印刷し、このグラビア印刷された面を生地側にし
てこの包装用フイルムを板付蒲鉾の生すり身に被
覆して包装し、リテーナに入れて常法により蒸煮
する。この場合板付浦鉾のすり身にはリテーナへ
の押圧力が加わり生地表面に包装用フイルムは密
着する。その後包装用フイルムを剥離すると生地
表面に可食性インキの着色が転移して鮮明かつ美
麗な着色が水産煉製品の表面にあらわれていた。
その場合フイルムの方には印刷した着色がほとん
ど残らなかつた。
