いはケイソウ土に担持し九遺元ニッケル触媒等を用い、

を持つことを特徴とするハードパター。 2 不飽和脂肪酸中のトランス酸量が30〜55憾であ

パターを得るに当って、(1)ラウリン酸トリグリセリ
ド、ミリスチン酸トリグリセリド、若しくはラウリン酸
とミリスチン酸との混合トリグリセリドと、(2)エル
シン酸含量の高いナタネ油又はこれを選択水添したもの
と、(5)パルミチン酸、ステアリン酸、オレイン酸、
リノール酸含量の高い油脂又はその選択水添したもの、
又はこれらの脂肪酸からなる合成トリグリセリド又はこ
れらの混合物との夫々の所要量を混合してエステル交換
し、・要すれば更に選択水添することを特徴とするハー
ドパターの製造方法。 5 エステル交換を低級アルコールの金属アルコキシド
