発された(特開昭55−845s 2 )−。DETAILED DESCRIPTION OF THE INVENTION The present invention relates to a method for thickening oil-in-water emulsions containing sucrose fatty acid esters.Sucrose fatty acid esters are widely used as food emulsifiers. However, the emulsifying power of sucrose fatty acid ester is significantly inferior to that of existing synthetic emulsifiers, so it is rarely used for purposes other than food, even though its safety is guaranteed. Recently, a new emulsification method has been developed that overcomes the drawbacks of sucrose fatty acid esters (Japanese Patent Application Laid-Open No. 55-845S2).

This method has the characteristic that not only a highly safe emulsion can be obtained, but also a fine and homogeneous emulsion can be obtained with a smaller amount of emulsifier than conventional techniques. However, when this technology is applied to cosmetics to make creams, the emulsion is difficult to thicken and it is extremely difficult to obtain a cream-like form. this is,
The emulsion obtained by this technology is a very fine emulsion, the structure created by the sucrose fatty acid nistert polyhydric alcohol has the effect of preventing crystallization of solid fat, and unlike conventional surfactants, it can be used as an emulsion in water. This is thought to be due to the fact that liquid crystal formation using an activator-higher alcohol is not introduced.

とができる。In order to overcome these drawbacks, Mokuito Moesha and his colleagues worked diligently to find a new thickening method to increase the viscosity of the emulsion and obtain a cream-like form. That is, the present invention involves adding an aqueous phase component to an oil-in-alcohol emulsion obtained from a sucrose fatty acid ester, a polyhydric alcohol, and an oil to produce an oil-in-water emulsion. add the substance,
p) The emulsion is thickened by adjusting I to 4.5 to 6.6. When the pH was adjusted to 4.5-6.6, the viscosity of the emulsion increased significantly [2,
Cream-like viscosity can be obtained even in systems with low solid fat content.

is known to aggregate and lose its surface activity.
In the present invention, a small amount of an acidic substance of about 0.01% to 0.5% is added to a normal system to adjust the pH to a weak acidity of 4.5 to 6.6 and increase the viscosity. It should not have any negative impact on the performance of the sugar fatty acid ester. Therefore, in the pH range of the present invention, no change in emulsion particle size is observed.

However, when the pH was adjusted to 6.0 by adding 0.05% citric acid to it, the viscosity became extremely high at 23,000 cp. In addition, since there was little solid fat, no changes in appearance or viscosity over time were observed.
