Abstract
PURPOSE: Highly unsaturated fatty acids in the oil extracted from acquatic life are concentrated and the concentration of arachidonic acid is made less than 3% in the highly unsaturated fatty acids to produce a healthful food that prevents the disorder in the blood circulation system.
CONSTITUTION: Oil is extracted from acquatic life such as sardins, mackerels, mackerel pikes, crabs, krills, sea urchins, whales or sea weeds and fatty acids are separated from the extract by winterization or ester interchange. The product is further subjected to winterization, urea addition, column chromatography, molecular distillation, adsorption fractionation or other processes and concentrated so that highly unsaturated fatty acids bearing 4 or more double bonds becomes more than 50% and arachidonic acid becomes less than 3% among the highly unsaturated fatty acids. After purified, the concentrate is packed together with an antioxidant or added to a food product, then packed.
