Abstract
PURPOSE: To suppress the excess use of common salt and exhibit a better toughening (stiffening) effect on roes than the use of only common salt, by slating the roes with a mixture of common salt with sodium malate.
CONSTITUTION: In salting cod roes, salmon roes and herring roes, the roes are salted with a mixture of common salt with sodium malate or the mixture is sprinkled over the roes. Thus, the roes are pickled.
