Abstract

PURPOSE: A combination of a microorganism assimilating sucrose and a lactic bacterium not assimilating fructose is inoculated to a soybean milk containing sucrose and cultured to prevent the extinction of the lactic bacterium and the dterioration in taste while the product is stored.
CONSTITUTION: Sucrose is added to a soybean milk, e.g., by 5W10%. A combination of a strain in Streptococcus thermophilus capable of assimilating sucrose to form glucose and fructose and another strain in Lactobacillus yugrutii assimilating only glucose but not fructose to form lactic acid is inoculated to the mixture and cultured, e.g., at 37°C for 24hr to produce the beverage of fermented soybean milk.
