Abstract
PURPOSE: To shorten the preparation steps of the steamed and kneaded noodle, by kneading the raw materials of the noodle while feeding water and hot steam simultaneously to the raw material, without adding water to the raw material before kneading.
CONSTITUTION: Raw materials of noodle, e.g. wheat flour, etc., are put in a mixer 12 without preliminary addition of water to the raw materials. Water and hot steam are introduced simultaneously into the ejector 3 from the water tank 7 and the boiler 1, respectively, mixed together, and sent to the mixer 12 through the water- steam mixing tube 11. The supplied water is heated by the hot steam in the ejector to a temperature sufficiently high to the conversion of the wheat flour starch to α-form. The supply of the water and the hot steam and the kneading of the mixture are continued until the water content of the raw materials in the mixer reaches to 48%.
