Abstract

PURPOSE: To prepare a salad product enclosed in a closed container, by packing solid salad materials in the closed container, filling a specific emulsified seasoning sauce in the container, sterilizing the seasoned materials in the container at a high temperature, and cooling the resultant materials simultaneously with the heating during the sterilization.
CONSTITUTION: A mayonnaise-like emulsified seasoning which is a main raw mateial is mixed with an adequate amount of an emulsification stabilizer, e.g. a pulverized potato, bread crumb or vegetable protein, to give an emulsified seasoning having a viscosity of about 50W800cp at 20°C. The resultant sauce is used to prepare a salad. Solid raw materials for the salad, e.g. meat or vegetables, which are pretreated and made into a suitable size, by the conventional method and the emulsified seasoning sauce are enclosed in a closed container and then sterilized at a high temperature to afford the aimed salad product.
