Abstract

PURPOSE: To obtain, in high yields, high-quality pectin useful as a gelling agent or emulsifier for food, by ultrafiltering a pectin-containing liquid obtained by the decomposition and extraction of vegetable materials through an ultrafilter.
CONSTITUTION: A pectin-containing liquid is prepared by decomposing and extracting vegetable materials such as vegetables, fruits, pericarps and sarcocarp of citrus and pressed residues thereof, under conditions of pref. an acidic pH of 1W3.5, a temperature of 0W120°C and a reduced pressure of 0.1W10kg/cm2. Then, the pectin-containing liquid is ultrafiltered through an ultrafilter which is in the form of membrane, sheet, hollow yarn, net work or microsphere, and which has pores which provide a fractionate having an MW of about 6,000W20,000. The purified pectin of the purpose is obtained by carrying out the ultrafiltration pref. at 0W120°C, 0.1W 10kg/cm2 for 10minW24hr or by carrying out the ultrafiltration continuously.
