Abstract

PURPOSE: To collect crude pectin in the form of remaining endocarp, by peeling the epicarp of citrus fruit, chemically treating the peeled citrus fruit, as such, without dividing into segments thereby removing only the exterior portion of the endocarp and separating the juice vesicles from the remaining endocarp.
CONSTITUTION: The endocarp of material oranges is peeled off in a usual manner, for example, by scalding the oranges at 80W90°C for about 60sec in a scalder and subsequently peeling them by manual work or a continuous peeling machine. Then, the peeled oranges, as such, without dividing into segments, are treated with an aqueous hydrochloric acid solution and treated, after water-washing, with an aqueous caustic soda solution thereby removing the exterior portion 1 of the endocarp and obtaining oranges consisting of the remaining endocarp 2 and pulp 3 (aggregation of juice vesicles). Next, when the oranges are subjected to suitable means for disarranging juice vesicles, the pulp 3 is removed from the remaining endocarp and separated into respective juice vesicles. After the pulp has been removed, crude pectin in the form of remaining endocarp 2 is left. This crude pectin is dried, ground and used, as such, in many uses such as a thickening agent for jam, etc.
