Abstract

PURPOSE: After taken-out culture medium of yeast is subjected to pasteurization and cell sparation or cell separation and washing with water, the yeast is reactivated and made to return to the cultivation tank under the continuation of the cultivation, thus producing yeast in high productivity without the contamination by undesirable microorganism.
CONSTITUTION: The culture madium taken out of the cultivation tank 1 is sent to the pasteurizer 2 where it is treated with a chemical. When the culture medium is treated with an acid as the chemical treatment, the acid is added threrto so that the pH becomes 1.5W3 and the treating time becomes 20W120min generally. The pasteurized culture medium is introduced into separator 3 where killed microorganisms and the chemical is romoved, preferably by use of washing water 8. The remaining yeast is sent to reactivator 4 to reactivate the yeast deactivated by the pasteurization treatment and is combined with nutrients or aerated with pipe 6, when it is cultured aerobically, then made to return to the tank 1. The reactivation is effected under conditions that the pH is 4W8 and the time is longer than 10min.
