Abstract
PURPOSE: To make it possible to preferably finish fermentation required for baking in a hot blast circulating type heating cooking apparatus, by detecting the time when a heater has been off to control the rotation period of a circulating fan.
CONSTITUTION: When a contact of a fermentation switch 61 is set in a position b, a heat regulator 26 is adjusted at a temperature of about 40°C required for fermentation, and action switches 50, 51 are switched on, a heater 17 starts the heating, an electric pressure is applied to a time delay circuit 63, a time delay relay 64 is switched on, and a circulation fan motor 27 is rotated. When the temperature in a heating chamber has exceeded a maximum temperature during fermentation, a switch 62 of the heat regulator 26 is switched off to switch instantly the heater 16 off, but the motor 27 is delayed to be switched off by a period (for example, in the order of 30sec to 1min) due to delay action by the time delay circuit 63. During this delayed period, the air in the heating chamber is circulated to reduce the temperature defference between the upper and lower parts thereof.
