Abstract

PURPOSE: A noodle, particularly Chinese noodle, having good storability without deteriorating the properties, flavor and taste thereof, and containing calcium oxide and/or hydroxide.
CONSTITUTION: Calcium oxide or calcium hydroxide or both are contained in a noodle in the following amounts based on 1kg product: about 6W60mg molecules in an uncooked Chinese noodle, about 2W30mg molecules in a boiled or steamed Chinese noodle, about 5mg molecules or less in an uncooked "udon" (wheat vermicelli) or uncooked "soba" (buckwheat vermicelli) and about 2mg molecules or less in a boiled "udon" or boiled "soba".
