Abstract

PURPOSE: To prepare a frozen "tofu" croquette preservable for a long time without losing the taste of "tofu" (a bean curd), by forming a piece of "tofu" dehydrated to a specific water-content and mixed with ingredients, battering the surface of the formed "tofu", smearing with bread crumb, and freezing.
CONSTITUTION: A piece of "tofu" is dehydrated to a water-content of 50W75wt%, and mixed with ingredients such as fried and seasoned vegetables (e.g. onion, carrot, corn, green peas, etc.), chicken meat, etc., and kneaded with a mixer. The mixing ratio of the ingredients to "tofu" is pref. 1 to about 3. The creamy product thus obtained is formed with a forming machine, and immersed in batter (thin paste of wheat flour and water). The surface of the battered product is smeared with bread crumb, and the product is frozen to obtain the objective frozen "tofu" croquette. It can be stored in a refrigerator, etc., and frying of the croguette in oil gives a delicious food composed of raw "tofu" mixed with the ingredients.
