Abstract

CONSTITUTION: "Owari-daikon", a kind of radish produced in Aichi prefecture including Nagoya city, is cut into pieces of appropriate sizes and shapes and pickled for a certain period of time, about one week. Then, the pickled radishes are seasoned with sea tangle, eitron, sodium glutamate, red pepper and so on and dipped in a solution composed of rice vinegar and ume vinegar for 2 or 3 days.
