Abstract
PURPOSE: To remove the peculiar smell of meat after cooking with heat, by permeating or adding maltol to the meat.
CONSTITUTION: Several to several tems ppm of one or two or more maltols, e.g. maltol, ethyl-maltol, or isomaltol, are permeated or added to meat, such as mutton, or goat, whale or dolphin meat, having a strong peculiar smell before or during cooking with heat.
