Abstract

PURPOSE: A stanch-containing food having improved quality, capable of preventing the retrogradation of the starch, and comprising pepitdes obtained by hydrolyzing proteins and a food additive surfactant.
CONSTITUTION: A food comprising (A) a starch-containing food, e.g. a starchy food consisting mainly of wheat or rice flour, starch-containing fish meat, or processed meat food, (B) 0.03W2wt.% of a food additive surfactant, e.g. a glycerol ester or sugar ester of a fatty acid, and (C) 0.03W2wt.% of peptides obtained by hydrolyzing proteins.
