Abstract

PURPOSE: The crude Stevia aqueous extract is subjected to electrodialysis using ion exchange membranes, thus isolating and obtaining in high yield the sweeteining substance with good taste.
CONSTITUTION: The crude aqueous extract of Stevia rebau diana Bertoni is filtered to remove insoluble substances, then subjected to electrodialysis using ion exchange membrane. The resulting dialyzed dialyzed solution is treated to remove impurities mainly consisting of coloring substances, when necessary, and then concentrated or extracted with a polyhydric alcohol to isolate the sweetening substance.
