Abstract
NEW MATERIAL:2,3-Butanediol ester of formula I [at least one of R1,2 are COR3 (R3 is H, alkyl or alkenyl), and the other is H].
EXAMPLE: 2,3-Butanediol monoacetate.
USE: A lasting flavoring agent having flavor of strawberry, passion fruit, mango, kava or the like, a flavor imparting agent, and a flavor modifying agent.
PROCESS: The compounds IV and/or V which correspond to formula I are prepared by reacting the compound II with a compound III (X is OH, halogen or oxygen; when X is oxygen, n=2, and when X is other than oxygen, n=1) or its functional derivative. Or, the compound V (two R3 may differ each other) is prepared by reacting the compound IV with a compund III (R3 in the formula III and IV may differ each other) or its functional derivative.
