Abstract
PURPOSE: To prepare a cookielike food having improved texture, hard mass and good crispness, fried in light brown, with the unique taste of potato or sweet potato (P), thickner than the conventional potato chips, by blanching P cut to a desired thickness, and by frying the rinsed and drained chips in oil.
CONSTITUTION: A potato (P) is cut to a desired thickness of about 3.0W3.5mm, and the chips are blanched at 60W100°C for 30W40sec until the whole chips turn amber in a half-boiled state, immersed in water for 20W30min, drained, and fried in oil.
