Abstract

PURPOSE: To obtain soybean paste which is almost odorless, by a method wherein the raw paste is placed and shut tightly in a drying fragrance chamber, saturated with a lingering scent resulting from the heating of dried orange peel and cinnamon, and the lingering scent and the odor of the raw paste are dispersed and removed by a cold blast apparatus or the like.
CONSTITUTION: Flat boxes 2 containing raw soybean paste in narrow width are placed at intervals in a drying fragrance chamber 1 such as a smokehouse. At the lower part of the chamber 1, a mixed fragrance material consisting of dried orange peel(70%) and cinnamon(30%) is heated by an electric heater to generate fragrance. The flat boxes are shut tightly in the chamber 1 for 5W6hrs and the raw paste is saturated with a lingering scent. The flat boxes are transferred to a cold blast chamber 4 where the boxes are exposed to a cold air at about 5°C for two hours by blowing the cold air through a cold air pipe 8 against the flat boxes, thereby the lingering scent and the odor of the raw paste are removed to obtain soybean paste which is almost odorless.
