2. Description of the Related Art Conventionally, in the case of foods and drinks, especially beverages, when an oil-soluble substance is added to a beverage, various additives are blended and subjected to a heat sterilization treatment, so that it is excellent in acid resistance, salt resistance and heat resistance. Is required. Furthermore, it is desired to maintain a uniform emulsified or solubilized state without causing creaming or separation of an oil-soluble substance even after long-term storage. Here, creaming means that emulsified fats and oils are partially separated and a part or all of the cream is creamy. Also, when blending an oil-soluble substance in a food or drink where high transparency such as a beverage or jelly is desired, since the oil-soluble substance is emulsified,
It usually becomes cloudy and its appearance deteriorates. Therefore, the amount of the oil-soluble substance added to such a substance is necessarily limited.

[0003] In order to develop foods and drinks containing a large amount of oil-soluble substances, various techniques have been conventionally studied. For example,
A method for solubilizing fats and oils in an aqueous phase containing proteins and sugars (Japanese Patent Application Laid-Open No. 56-144053), and a method for solubilizing oil-soluble substances in water using polyglycerin unsaturated fatty acid esters and sugars or sugar alcohols (Tokuhei 6-3686
No. 2) is known. However, the former has low acid resistance and salt resistance, and cannot maintain a stable solubilized state in the presence of an acidic or concentrated salt, and the latter uses a small amount of saccharides or sugar alcohols. Poor stability in solubilized state. Both of them were excellent in acid resistance, salt resistance and heat resistance, and could not be sufficiently satisfied as a composition for maintaining a stable solubilized state.

Means for Solving the Problems The present inventors have made intensive studies to solve the above problems, and as a result, if a specific polyglycerin fatty acid monoester is used to solubilize an oil-soluble substance,
A stable oil-soluble substance solubilizing composition having excellent acid resistance, salt resistance, and heat resistance can be obtained, and the food or beverage containing the composition can be creamed or separated from the oil-soluble substance even after long-term storage. Without finding the fact that a uniform solubilized state can be maintained without this, the present invention was completed based on this finding.

The polyglycerol fatty acid monoester used in the present invention is a polyglycerol fatty acid monoester composed of polyglycerin having an average degree of polymerization of 5 or more, preferably polyglycerin having an average degree of polymerization of 5 to 10, and myristic acid or oleic acid. It is a monoester. When the average degree of polymerization of polyglycerin is less than 5, a transparent oil-soluble substance solubilizing composition cannot be obtained. Fatty acids constituting polyglycerin fatty acid monoesters other than the above fatty acids make it difficult to obtain a transparent oil-soluble substance solubilizing composition. Monoesters of polyglycerol with an average degree of polymerization of 10 and oleic acid are particularly preferred. Myristic acid is more acid resistant than oleic acid,
Slightly inferior in salt resistance and heat resistance. The blending amount of the polyglycerin fatty acid monoester is from 0.05 to 30% by weight, preferably from 0.05 to 20% by weight, more preferably from 0.1 to 15% by weight. The amount of polyglycerin monoester is 0.0
If it is less than 1% by weight, it is difficult to obtain a stable oil-soluble substance solubilizing composition, and if it exceeds 30% by weight, the content of the oil-soluble substance is undesirably reduced.

Examples thereof include sugar alcohols such as maltitol, reduced starch syrup, lactitol, palatinit, erythritol, sorbitol, and mannitol, and these can be used alone or in combination of two or more. The blending amount of the polyhydric alcohol is 40 to 80% by weight, preferably 45 to 75% by weight,
More preferably, it is 50 to 70% by weight. When the blending amount of the polyhydric alcohol is less than 40% by weight, it is difficult to obtain a stable oil-soluble substance solubilizing composition, and when it exceeds 80% by weight, the viscosity increases and it is difficult to solubilize the composition.

The results are shown in Table 1 and the results of visual appearance are also shown.
In the table, ○ is clear, × is cloudy, * is separated immediately after preparation, * ※
Indicates gelation immediately after preparation. The oil-soluble substance solubilizing composition had transparency, and its state did not change when it was stored at 60 ° C. for one month. In addition, a beverage was prepared using each material having the composition shown in Table 2, filled in a 100 ml bottle, and sealed. The beverage was sterilized by heating at 95 ° C. for 15 minutes to obtain a beverage. After the beverage thus obtained was stored at 40 ° C. for one month, the flavor was evaluated by sensory evaluation. Sensory evaluation is 1

Comparative Example 1 Same as Example 1 except that pentaglycerin monolaurate (trade name: Sunsoft A-121E, manufactured by Taiyo Chemical Co., Ltd.) was used as a polyglycerin fatty acid monoester in a 500 ml stainless steel beaker. Was repeated to obtain an oil-soluble substance-containing composition. The prepared oil-soluble substance-containing composition became cloudy, and creaming occurred when stored at 60 ° C. for one month. Further, the transmittance of the oil-soluble substance-containing composition immediately after preparation to water was measured under the same conditions as in Example 1 and found to be 78%. The results are shown in Table 1.
