状の結着材を乾燥することによって凍豆腐の表面に色素
原料を結着することができる。この場合、着色原料とし
て、沸騰水に可溶の着色原料を使用してもよい。尚、模
様を付与していない乾燥凍豆腐に水を含ませて膨潤凍豆
腐とし、色素原料と結着材とが混合されて成る着色材に
よって模様を付してから乾燥しても、図1に示す凍豆腐
