は食肉の嗜好に独特のものがあり、筋肉の中に脂肪が斑
点のように交雑しているいわゆる霜降り肉が好まれる。
この様な肉は柔らかいと同時に適度なしまりも有してい
る。従来知られている飼料添加剤は、ただ単に家畜に必
要な栄養素を補助し、あるいは吸収性を高めて家畜の成
長を促すもので、肉質の改善を考慮したものではなかっ
た。例えば従来の飼料添加剤では、成長が早く、肉中に
脂肪も蓄積されるが、厚くはっきりとした脂肪の層が現
れ、油身と呼ばれる部分が増加するものであった。脂肪
が蓄積された肉であっても油身は嗜好に合わず、またこ
れが必要以上に現れた肉は、例えば一度冷凍し、再びこ
れを解凍した時に油身の層と筋肉の層とが分離し易くな
るという欠点がある。従来の飼料添加剤について、本発
明者等が種々検討したところ、特定の不飽和脂肪酸カル
シウム塩を用いると肉質が改善されることを見出し、先
に出願(特願平3−353441号)した。しかしなが
ら、脂肪酸カルシウム塩は嗜好性が若干低く、なれるま
では他の飼料の採餌量を低下させる傾向があり、また給
与することができても体内に取り込まれる量及び筋間に
蓄積される量が十分でない等の問題点があり、さらに改
良の余地があった。

重量比は、高蛋白質含有飼料が20未満で脂肪酸カルシ
ウム塩が80を越えるものは、脂肪酸カルシウム塩の体
内へ取り込まれる率が低下し好ましくない。また脂肪酸
カルシウム塩が40未満で高蛋白質含有飼料が60を越
えるものでは油脂量が少ないと共に、蛋白質の量が多す
ぎてアンモニアの発生量が多くなり、胃内の細菌叢の働
きを阻害するおそれがある。

り屠体の肉質を評価した。飼料添加剤の組成を表1に、
肉質の評価結果を表2に示す。
