Description
本開示は、1つ以上の低分子量タンパク質を含むカプセル化剤または低分子量タンパク質画分を含む乳化剤を使用することにより、オメガ3リッチオイルを含む組成物およびエマルジョンの酸化安定性を改善することができるという発明者の予想外の発見に基づいている。

低分子量タンパク質カプセル化剤を使用したリン脂質含有油のカプセル化
噴霧乾燥粉末の形態でマイクロカプセル化されたリン脂質に富む油を安定化するそれらの能力について、異なる分子量のさまざまなタンパク質およびタンパク質画分を調査した。天然トコフェロールとパルミチン酸アスコルビルを混合した精製マグロ油をコア素材として使用した。カゼイン酸ナトリウム、ホエイタンパク質単離物、高分子量ポテトタンパク質画分、および低分子量ポテトタンパク質画分を含む、さまざまな分子量を有するいくつかのタンパク質およびタンパク質画分を、カプセル化のためのタンパク質源として選択した。
実施例1のマイクロカプセル化粉末の酸化安定性
約4gのマグロ油を含むマイクロカプセル化粉末を5バールの密閉チャンバー内で、酸素下で70℃に加熱し、ML Oxipres(商標)(Mikrolab Aarhus A/S、デンマーク)を使用して密閉チャンバーの圧力をモニターした。それを越えると酸素の消費により圧力が劇的に低下する誘導期間(IP)が、LCPUFAを含むマイクロカプセル粉末の酸化安定性を評価するための指標として使用された。具体的には、酸素の減少は、酸化を示す誘導期間として記録された(図3を参照)。PPHベースの水中マグロ油型エマルションは粘度が高いので、他の製剤の固形分が50%であっても、噴霧乾燥できず、酸化安定性データを取得することができなかった。
・28±2%の油負荷誘導期間が158時間であるカゼイン酸ナトリウムベースの粉末;
・48±2%のオイル負荷-誘導期間が136時間であるPPLベースの粉末;
・28±2%のオイル負荷-誘導期間が117時間であるWPIベースの粉末;
・48±2%のオイル負荷誘導期間が41時間であるMRPベースの粉末。
