Claims (7)
- 以下の工程を含むことを特徴とする、野菜・果物パルプクリスプの製造方法。
- 果物及び/或いは野菜を絞って脱水し、そのパルプを得る、
- 50〜90℃の間で加熱し、その後は初期ケフィア量の少なくとも20%を離漿の形で除去し、最大80%の水分を有する1〜50重量%の量の濃縮ケフィアを前記得られた果物及び/或いは野菜のパルプに添加する、
- すべての中身を混ぜる、
- 混合物を成形する、
- トレイ上に成形品を広げる、
- トレイ上の製品を凍結する、
- 凍結製品を真空下で凍結乾燥する。 - 果物及び/或いは野菜を圧搾により50〜95%まで脱水することを特徴とする請求項1に記載の野菜・果物パルプクリスプの製造方法。
- トレイ上の製品を−15℃〜−50℃で冷凍することを特徴とする請求項1に記載の野菜・果物パルプクリスプの製造方法。
- トレイ上の製品を0.001〜100ミリバールの真空下で3〜48時間凍結乾燥することを特徴とする請求項3に記載の野菜・果物パルプクリスプの製造方法。
- 得られたパルプに濃縮ケフィアを添加する代わりに、濃縮ケフィアの乾燥粉末を添加することを特徴とする請求項1に記載の野菜・果物パルプクリスプの製造方法。
- 濃縮ケフィアが、油料種子、種子粉及び同様の天然食品添加物を用いてケフィア中の水を部分的に結合させることによって得られることを特徴とする請求項1に記載の野菜・果物パルプクリスプの製造方法。
- 製品の成形中、植物または動物由来製品を添加することを特徴とする請求項1〜6のいずれか1項に記載の野菜・果物パルプクリスプの製造方法。
