官能評価は次のようにして評価を行った。各温度帯において通常焼成処理のみを行ったものをコントロールとした。同一温度帯の各実施例・比較例を、5人のパネラーにブラインド条件下、見た目、口どけ、食感について、下記評価に基づいて評価してもらった。

△:コントロールよりも劣る
×:コントロールよりもかなり劣る

表1,2から明らかなように、各実施例において通常焼成処理で生地水分を4〜26%まで乾燥させたものは見た目、口どけ、食感のいずれにおいてもコントロールより優れていた。これは、生地の水分量が上記範囲であれば、膨化に十分な量の水分が存在するため、口どけや食感が良くなるためと考えられる。また、生地の水分量が上記範囲になるまで少なくとも1分以上は表面が焼成されることで、細かなクラックとともに表面が焼き固められ、クラックから生地内部の水分が抜けるため、過熱蒸気処理によっても、表面がひび割れたりタダレたりすることがないと考えられる。 As is clear from Tables 1 and 2, in each example, the dough moisture dried to 4 to 26% by normal baking treatment was superior to the control in any of appearance, mouthfeel, and texture.
