Description
Claims (23)
- 粉末粒子の脂肪表面に粒状流動剤が会合することを特徴とし、
前記粒状流動剤が、シリカ、アルミノ珪酸ナトリウム、ケイ酸アルミニウム又はこれらの任意の組合せから選択され、
前記粒状流動剤が1ミクロン〜20ミクロンの間の平均粒子サイズを有し、
前記粒状流動剤が100g/l未満のタップ密度を有する、低温の液体に可溶性である脂肪含有粉末組成物。 - 前記流動剤の粒子サイズが平均粉末粒子サイズよりも小さい、請求項1に記載の粉末組成物。
- 前記粒状流動剤が2ミクロン〜7ミクロンの間の平均粒子サイズを有する、請求項1又は2に記載の粉末組成物。
- 前記粒状流動剤が粉末組成物の0.1重量%〜10重量%の量で存在する、請求項1〜3のいずれか一項に記載の粉末組成物。
- 前記粒状流動剤が粉末組成物の1重量%〜5重量%の量で存在する、請求項1〜4のいずれか一項に記載の粉末組成物。
- 前記組成物の総脂肪含有量が0.1重量%〜50重量%の間である、請求項1〜5のいずれか一項に記載の粉末組成物。
- 前記脂肪が、0℃よりも低い融点を有する、請求項6に記載の粉末組成物。
- 前記脂肪が、0℃を越える融点を有する、請求項6に記載の粉末組成物。
- 前記脂肪が、0:1〜3:1の範囲の0℃よりも高い融点を有する高融点脂肪対0℃よりも低い融点を有する低融点脂肪の比率からなる、請求項6〜8のいずれか一項に記載の粉末組成物。
- 前記総脂肪含有量が、2/3重量%の0℃よりも高い融点を有する高融点脂肪と、1/3重量%の0℃よりも低い融点を有する低融点脂肪とである、請求項6〜9のいずれか一項に記載の粉末組成物。
- 前記組成物が、タンパク質及び炭水化物から選択される少なくとも1つのさらなる成分を含む、請求項1〜10のいずれか一項に記載の粉末組成物。
- 前記組成物が、安定剤、乳化剤、ビタミン、ミネラル、風味改質剤及び着色剤から選択される少なくとも1つのさらなる成分を含む、請求項1〜11のいずれか一項に記載の粉末組成物。
- 粉末粒子の表面に、平均粉末粒子直径よりも小さい平均直径を有する請求項1記載の粒状流動剤の粒子が会合していることを特徴とする、食品成分の粉末粒子。
- 前記流動剤粒子の大きさが平均粉末粒子サイズの少なくとも1/10より小さい、請求項13に記載の粉末粒子。
- 粉末に請求項1記載の粒状流動剤を加えるステップを含む、低温の液体における脂肪含有粉末の溶解性を改善する方法。
- 前記流動剤の粒子サイズが平均粉末粒子サイズよりも小さい、請求項15に記載の方法。
- 前記粒状流動剤が2ミクロン〜7ミクロンの間の平均粒子サイズを有する、請求項15又は16に記載の方法。
- 前記粒状流動剤が粉末組成物の0.1重量%〜10重量%の量で存在する、請求項15〜17のいずれか一項に記載の方法。
- 前記組成物の総脂肪含有量が0.1重量%〜50重量%の間である、請求項15〜18のいずれか一項に記載の方法。
- 0℃よりも高い融点を有する高融点脂肪対0℃よりも低い融点を有する低融点脂肪の比率が0:1〜3:1の範囲にある、請求項19に記載の方法。
- 食品粉末及び食品成分粉末の冷水溶解性を改善するための請求項1記載の粒状流動剤の使用。
- 前記流動剤の粒子サイズが平均粉末粒子サイズよりも小さい、請求項21に記載の使用。
- 前記粒状流動剤が粉末組成物の0.1重量%〜10重量%の量で存在する、請求項21又は22に記載の使用。
