Description

【発明の詳細な説明】 〔産業上の利用分野〕 本発明は、サポニンに由来する苦味をアミノ酸により
軽減することを目的とするサポニン及びアミノ酸含有組
成物特にサポニンに由来する苦味の改善された飲食用組
成物に関する。

ール低下作用などの生理作用が見いだされ、サポニンを
含有した飲食物がいわゆる健康食などとして利用される
ようになってきた。しかしながらサポニンは独特の苦味
とえぐ味を有しており、食品等の配合に対しては、この
官能的問題点の改良が望まれてきた。これを解決する方
法として、たとえば特開昭59−224668号では茶サポニン
をα−グリコシル転移酵素の作用によりα−グリコシル
茶サポニンとしその苦味とえぐ味の軽減を図っている。
しかしこの様な化合物は特定のα−グリコシル転移酵素
を使用して製造する必要があり、又その安全性や毒性の
問題点から食品等へ自由に配合するには問題がある。

本発明はサポニンを含有組成物、就中飲食用組成物中
のサポニン特有の苦味とえぐ味を安全かつ容易な手段に
より無くして、その摂取を容易にすることを課題とす
る。

果、苦味とえぐ味を呈するサポニンにアミノ酸を含有す

やすくなることを発見した。アミノ酸はタンパク質の構
成成分であり本来食品として安全に配合できる物質であ
り、本目的にふさわしいものと言える。

品添加物として登録され、その界面活性作用としての物
理化学特性を生かして発泡剤や乳化剤として利用されて

用いて茶サポニンを遊離させ精製することができる。
