Abstract
Description
酸サンディングが散布される、ゼラチンに基づくゲル中で、ちょうどいいときに、酸の移動を測定することによって、ソフトキャンディー中への酸の移動が定量的にまねられる。
1. PURAC バイオケムB.V(PURAC Biochem B.V)からのPURAC Powder(商標)55 (PP55)
2. リンゴ酸水素ナトリウム(以後、リンゴ酸モノナトリウム(MSM)またはモノマレートと称する)
3. バルケム(Balchem)からのカプセル封入されたリンゴ酸95%(EMA)、S-121。コーティングは、部分的に水素化された植物油から成る。
4. PP55+カプセル封入されたリンゴ酸(重量に基づく比50:50)
5. リンゴ酸モノナトリウム+フマル酸(アクロス(Acros)、MA&-019)(重量に基づく比50:50)
6. バルケム(Balchem)からのカプセル封入されたクエン酸95%(ECA)、S-167。
7. PP55+カプセル封入されたクエン酸(重量に基づく比50:50)
8. ラプス(Raps)からのコーティングされたクエン酸(CCA)、S-201。コーティングは、マルトデキストリンおよびガーガムから成る。
リンゴ酸モノナトリウムの安定性および、乳酸のような吸湿性の酸をさらに含む酸サンディング混合物中のリンゴ酸モノナトリウムの安定化の影響力が、吸湿性の酸のソフトキャンディー中への移動に関する以下の実験において証明される。
環境からの水分の取り込みに関するリンゴ酸モノナトリウムの安定性および、乳酸のような吸湿性の酸をさらに含む酸サンディング混合物中のリンゴ酸モノナトリウムの安定化の影響力がまた、動的蒸気収着(DVS)の一般に公知の技術を用いて測定された。
リンゴ酸モノナトリウムを含むかまたはPP55と組合せてリンゴ酸モノナトリウムを含む、酸サンディングされたソフトキャンディーを、味パネルによって味について分析した。2つの異なるタイプのソフトキャンディーを酸サンディングした:デンプンに基づくキャンディーおよびゼラチンに基づくキャンディー。デンプンに基づくキャンディーは、さらに砂糖を含む酸サンディング組成物中8.2重量%および40重量%の酸粉末を用いてサンディングされた。ゼラチンに基づくキャンディーについての酸サンディング組成物は、8.2重量%の酸を含んでいた。
・ リンゴ酸モノナトリウム(M.S.M.);生成物は、リンゴ酸(ケムプロハ/ブレンタグ(Chemproha/Brenntag)、結晶形態)、50%水酸化ナトリウム(ケムプロハ/ブレンタグ(Chemproha/Brenntag)から)および脱イオン水を用いて以下に記載した方法に従って作られる。
・ PURAC バイオケムB.V(PURAC Biochem B.V)からのPURAC Powder(商標)55(PP55)
・ ゼラチンに基づくソフトキャンディー
・ デンプンに基づくソフトキャンディー
・ サンディング糖および極細糖
溶液を撹拌しながら、20〜30℃の温度にてミキサー中で、90kgのリンゴ酸を、86kgの脱イオン水に添加した。いくらかの蒸気を使用して、全てのリンゴ酸を溶かした。約53.7重量%の水酸化ナトリウム溶液をミキサーに添加した。温度が約80℃に上がった。溶液を一晩室温に冷却させ、その間にリンゴ酸モノナトリウム結晶が形成された。遠心分離によって結晶を母液から分離した後、60℃のオーブン中で約3時間乾燥した。
1. 100重量%のPP55
2. 70:30重量%のPP55:リンゴ酸モノナトリウム
3. 50:50重量%のPP55:リンゴ酸モノナトリウム
4. 30:70重量%のPP55:リンゴ酸モノナトリウム
5. 100重量%のリンゴ酸モノナトリウム
Claims (9)
- リンゴ酸、クエン酸、フマル酸、アジピン酸およびそれらの混合物から選択される部分的に中和されたポリカルボン酸ならびに、糖および甘味料の少なくとも一つを含む粉末酸サンディング組成物。
- 1〜45重量%の部分的に中和されたポリカルボン酸を含み、糖および/または甘味料対酸の重量比が99:1〜55:45である請求項1記載の組成物。
- 糖および/または甘味料の量が、組成物の5〜99重量%である請求項1または2記載の組成物。
- 該部分的に中和されたポリカルボン酸が、リンゴ酸水素カリウムもしくはナトリウム、またはクエン酸のモノ-もしくはジ-塩である請求項1〜3のいずれか1項記載の組成物。
- 乳酸および/または乳酸カルシウムをさらに含む請求項1〜4のいずれか1項記載の組成物。
- フマル酸および/またはコーティングされたリンゴ酸をさらに含む請求項1〜5のいずれか1項記載の組成物。
- 菓子製品を酸サンディングするための方法であって、該製品が乾燥蒸気または粘着剤の熱溶液と接触された後、該湿らされた製品が請求項1〜7のいずれか1項記載の酸サンディング組成物と接触される、上記方法。
- 請求項1〜7のいずれか1項記載の組成物を含む酸サンディングを有する、酸サンディングされた菓子製品。
- 該菓子製品が、ハードもしくはソフトキャンディーである請求項9記載の酸サンディングされた菓子製品。
