Abstract
【解決手段】ヒアルロン酸含有量が0.001〜0.12重量%であり、且つ飲料の粘度が1.1〜3.0mPa・sであることを特徴とする容器ヒアルロン酸含有飲料及びその製造方法に関する。ヒアルロン酸の平均分子量が10〜50万であることが好ましく、またヒアルロン酸は乳酸菌由来であることが好ましい。

2.ヒアルロン酸の平均分子量が10〜50万であることを特徴とする請求項1記載の容器詰ヒアルロン酸含有飲料。
3.ヒアルロン酸が、エンテロコッカス属、ストレプトコッカス属、ラクトバチルス属、ビフィドバクテリウム属のいずれかの乳酸菌由来であることを特徴とする請求項1又は2記載の容器詰ヒアルロン酸含有飲料。
4.ヒアルロン酸を60〜90℃で溶解させる工程を含むことを特徴とする請求項1〜3のいずれか記載の容器詰ヒアルロン酸含有飲料の製造方法。
5.130〜140℃で30〜120秒間加熱殺菌することを特徴とする請求項1〜3のいずれか記載の容器詰ヒアルロン酸含有飲料の製造方法。
本発明によれば、上記組成とすることにより、飲料本来の呈味が維持された容器詰ヒアルロン酸含有飲料を提供することが可能となる。
プラスチックフィルムと複合された紙容器、瓶などの通常の形態で提供することができる。ここでいう容器詰飲料とは希釈せずに飲用できるものをいう。
株式会社伊藤園製の『ホームサイズ緑茶』40gを92℃の蒸留水1600gで5分間抽出し、冷却後7000rpm10分間遠心分離して緑茶抽出液を得た。この緑茶抽出液にビタミンC及び重炭酸ナトリウムを用いてpH6.3に調整し茶飲料を得た。
キューピー株式会社製の『ヒアルロン酸HA−LF』 平均分子量:10〜50万 動粘度:20cSt以下 をヒアルロン酸Aとして用いた。また、キューピー株式会社製の『ヒアルロン酸HA−F』 平均分子量:60〜100万 動粘度:20cSt以上 をヒアルロン酸Bとして用いた。
表1に示すヒアルロン酸を得られた茶飲料に添加し、イオン交換水を加え5000gにし、135度、30秒UHT殺菌し、無色透明なPETボトル容器に詰め、粘度の測定、風味及び呈味の官能評価を行った。官能評価はヒアルロン酸を添加しない比較例1を基準とし、風味は○、△、×の3段階評価、呈味は比較例1を0として5段階評価した。

- ヒアルロン酸含有量が0.001〜0.12重量%であり、且つ飲料の粘度が1.1〜3.0mPa・sであることを特徴とする容器詰ヒアルロン酸含有飲料。
- ヒアルロン酸の平均分子量が10〜50万であることを特徴とする請求項1記載の容器詰ヒアルロン酸含有飲料。
- ヒアルロン酸が、エンテロコッカス属、ストレプトコッカス属、ラクトバチルス属、ビフィドバクテリウム属のいずれかの乳酸菌由来であることを特徴とする請求項1又は2記載の容器詰ヒアルロン酸含有飲料。
- ヒアルロン酸を60〜90℃で溶解させる工程を含むことを特徴とする請求項1〜3のいずれか記載の容器詰ヒアルロン酸含有飲料の製造方法。
- 130〜145℃で30〜120秒間加熱殺菌することを特徴とする請求項1〜3のいずれか記載の容器詰ヒアルロン酸含有飲料の製造方法。
