Abstract
Functional food preparations that can be used as ingredients in food compositions or as nutraceuticals which contain fructans (and/or fructooligosaccharides) and phytochemicals (plant polyphenols). A functional food product comprises : (a) 10-90wt% of linear fructans, branched fructans, and/or fructooligosaccharides, and (b) 0.1-80wt% of naringine, hesperidine, hesperetin, anthocyanin or resveratrol as a polyphenol, both relative to the dry matter. Independent claims are included for the following : (a) the drying process consists of spray-dry technology, and (b) the food product is co-spray-dried with 0.5-50wt% of beta-glucans, or with a bilberry juice or extract.
