Abstract

Un metodo per controllare e prevenire in campo enologico alterazioni dovute e contaminazioni batteriche, che avvengono sia durante il processo di vinificazione che durante la conservazione del vino, mediante l'impiego di lisozima (Lyso) in associazione con sostanze sinergiche a carattere acido, di formula generale (I)R - COOH (I)nella quale R rappresenta un alchile, un alchenile, un idrossialchile, un carbossialchile, un carbossialchenile, od infine un carbossiidrossialchile, aventi una catena da 2 e 9 atomi di carbonio, in tutte le eventuali forme otticamente attive, oppure in forma racemica.
