Abstract
A method of freezing cream for storage comprises filling a container impermeable to oxygen and of good thermal conductivity, preferably of tinned sheet steel, with unhomogenized preferably pasteurized cream leaving a volume between 6% and 10% unfilled, hermetically sealing the container and freezing by immersion in a fluid at a temperature not greater than -38 DEG F. (e.g. by immersion in a brine bath or exposure to a gaseous blast at -50 DEG F.) then storing at or below 5 DEG F. preferably below 0 DEG F.
