Abstract

A sucrose fatty acid ester of use in the subsequent separation of high melting glycerides from hydrogenated soyabean oil (see Division C5) in which the fatty acid content consists of 16.9% total saturated acids (approximately half palmitic and half stearic acid), 75% oleic acid, 7.9% linoleic acid, and 0.2% linolenic acid, and in which an average of 3.0 hydroxyl groups of the sucrose molecule are esterified, is obtained by heating at 240 DEG F. for 4 hours a mixture of sucrose, a fat composition consisting of 80% soyabean oil and 20% cottonseed oil, hydrogenated to iodine value 76, and pyridine together with a sodium methoxide catalyst suspended in xylene. The catalyst is then inactivated with acetic acid and the pyridine removed by vacuum. The residue is taken up in a 4:1 mixture of ethyl acetate and n-butanol, water-washed, and the solvent removed. Specification 962,814 is referred to.ALSO:The subsequent separation of high melting glycerides from hydrogenated soyabean oil is facilitated by the addition of 0.05-0.5%, by weight of the oil, of a sucrose fatty acid ester which contains not more than 5 unesterified hydroxyl groups per sucrose molecule, and which contains, by weight of the total fatty acids, 8-16% palmitic acid and 5-15% stearic acid so that there is a total of 15-27% saturated fatty acids, 64-76% oleic acid, and 3-9% linoleic acid. The oil, which has suitably been hydrogenated to an iodine value of 95-120, is usually heated to at least 140 DEG F., but not enough to cause degradation, the sucrose ester added, and the mixture allowed to cool slowly over a period of days to 30-50 DEG F., whereupon the solid glycerides which have separated may be rapidly filtered off. In an example, the sucrose ester used is one obtained by interesterifying sucrose with a mixture, hydrogenated to an iodine value of 76, of 1 part by weight cottonseed oil and 4 parts soyabean oil (see Division C2).
