948,517. Reconstitutable freeze-dried foods; coffee powder. BASIC VEGETABLE PRODUCTS Inc. Oct. 30, 1961 [June 26, 1961], No. 38802/61. Headings A2B and A2D. Readily reconstitutable dehydrated products are produced by freezing the product to be dehydrated, subjecting the frozen product to a milling operation to produce finely-divided individual frozen particles of the product, introducing the particles into a freeze-drying chamber, distributing the particles in spaced relationship within the chamber, and applying sufficient heat to the particles to effect a substantially instantaneous sublimation of the ice in the particles. Frozen material milled to between 20 and 100 mesh particle size is passed into and out of a vacuum tank 18, Fig. 2, wherein freeze-drying takes place substantially instantaneously, through air locks 16, 17, 31 and 32 in communication with a source of vacuum and a condenser through piping 21 and 34, respectively. In their passage through the vacuum tank, the particles of material are spread by a spreading device 26 into a uniformly thin layer over a cascade plate 23 which is of adjustable inclination, is heated by coils or electric elements 25, and vibrated by a unit 27, and the particles tumble and roll to the lower end 28 of the plate. In modifications (1) the vacuum tank is provided with a plurality of cascade plates supported on sprung, vertical rods, Fig. 3 (not shown), (2) the vibrating unit is secured to the outer surface of the tank, Fig. 4 (not shown), and (3) the particles are spread by a rapidly rotating plate 71, Fig. 5, on to a series of conical members, 72-81, supported on sprung, vertical rods 82, the entire assembly of cones and rods being vibrated by a unit 84. Products specifically mentioned; garlic, onions, horseradish, avocados, artichokes, asparagus, spinach, green or string beans, peas, carrots, tomatoes, apricots, peaches, apples, coffee, meat, poultry and fish, soup and gravy powders, and baby and geriatric foods. An instantly dispersible coffee powder may be obtained by milling and freeze-drying coffee concentrates of 27 to 28% solids content, employing the instant invention. Reference is made to a prior proposal for the withdrawing of freeze-dried material from the vacuum chamber through air locks and on moving belts.
